While legend maintains that tea was discovered in 2737 BCE by Chinese Emperor Shennong, when a few errant leaves fell into boiling water, the history of green tea began much later. It was not until the 8th century that the method of steaming green tea to halt oxidation was discovered. (Oxidation is the process through which green tea leaves turn black.) It would still not be for another four hundred years during the 12th century that the pan-firing method of green tea production was developed.
Evidently, tea development took time in the ancient world. Over the centuries, both techniques, steaming and pan-firing, have resulted in the creation of countless styles of green tea, each with their own unique character. White Monkey Paw
White Monkey Paw is made from the top two leaves and the bud of new season growth (late March /early April). These delicate leaves are gently and gingerly steamed and dried, resulting in an exquisite handmade green tea.
