Crisp Mountain whites. Lofty, wet Fujian
is the world centre of white Tea production. Owing to the exceptionally
delicate character of these teas, a visit to the province during
the harvest is essential in order to properly grade the year’s
production. Factors like rainfall, temperature and ambient
humidity can affect the finished product and cause prices to fluctuate
wildly from year to year. When cupped, the best examples are exceptionally
fresh, and laden with nuance.
Chongqing
White hot tea from one of China’s three furnaces. Considered
to be one of the three warmest regions of China, (the other two furnaces are
Wuhan and Nanjing), Chongqing is one of the country’s lesser
white tea producing regions by volume. Like Fujian, the
quality of the region’s output is exceptionally high. The
heat and humidity imparts a clean fresh taste and
a faint hint of apple, a regional characteristic particular to
Chongqing white teas.
